A Journey Through Time

Our olive mill has been in the Paraschakis family for generations. We are proud to continue the age-old tradition of producing high-quality extra virgin olive oil, using methods that have been passed down through the years. When you visit, you’ll step back in time and see the traditional techniques that have been refined and perfected over centuries.

The Olive Oil Production Process

During your visit, you will have the opportunity to learn about every stage of the olive oil production process. From the moment the olives are handpicked from our groves to the final bottling, we ensure that every step is carried out with meticulous care and attention to detail.

  • Harvesting: The journey begins with the careful handpicking of olives. We believe that handpicking ensures the olives are in perfect condition, which is crucial for producing high-quality olive oil.
  • Cleaning and Crushing: After harvesting, the olives are cleaned and then crushed to create a paste. This process releases the natural oils contained within the olives.
  • Pressing: The olive paste is then pressed to extract the oil. We use a traditional cold-press method, which preserves the natural flavors and nutritional properties of the olive oil.
  • Separation: The oil is separated from the water and solids, resulting in pure extra virgin olive oil.
  • Bottling: Finally, the olive oil is carefully bottled and sealed, ready to be enjoyed by our visitors and customers around the world.
